In 1870, DeWitt Clinton Pendery arrived in, then untamed, Fort Worth, Texas. He had been rattled and rolled in horse-drawn stage all the way from Cincinnati, Ohio. Local cowboys jeered his elegant appearance as he stepped onto the dusty street. He had a straight, easy stride, comfortable in his long frock coat and tall silk hat. (Note the top hat in the Pendery Logo). Then… His thin lips twinged beneath the carefully waxed handle bar moustache. This, his only visible reaction to the whizzing shot and his twisted hat from the local’s initiation bullet. D.W.C.’s undaunted reaction, as he casually collected his belongings and continued his way, earned immediate popular respect. He joined his established family business and began the heritage we enjoy today. D.W.C. developed great interest in regional Texas seasonings. By 1890, he was selling his own unique blends to cafes, hotels and citizens far and near. Circulars, carried on the Stage Line, were one of his means of advertising. There, he described and extolled his “Chiltomaline”.
Chiltomaline is the combination of ground select chile pods, cumin, oregano and other spices. This, a fore-runner in world seasonings, enjoyed more than mere culinary favor. DeWitt Clinton wrote of the medicinal benefits of his condiment and its acclamation from physicians. “The health giving properties of hot chile peppers have no equal. They give tone to the alimentary canal, regulating the functions, giving a natural appetite, and promoting health by action of the kidneys, skin and lymphatics. ”
